Bread and Pizza

BREAD AND PIZZA

PREPARATION

(1) Pour the mix into the stand mixer bowl and add 340 ml of warm water and 8 ml of extra olive oil.(2) Whisk with paddle attachment for approx. 5 minutes. With greased hands, place dough in a well-oiled bowl and let it rest until size doubles. (3a) For Bread: Turn onto a lightly floured surface dusted with rice flour. Knead until smooth. Divide dough into portions. Place on baking tray lightly covered with rice flour or baking paper. Set aside until size doubles again. (4) Preheat oven to 190°C and bake for 25-30 minutes until golden brown. (3b) For Pizza: Oil the baking tray and roll the dough out, then add tomato sauce. Take the pizza out of the oven and add your favourite topping. (4) Bake for a further 10 minutes until pizza is cooked.
What to add: 340 ml of warm water and 8 g of extra virgin olive oil.

Pasta Fresca

PASTA FRESCA

PREPARATION

(1) Pour 400 g of powder mix into the planetary (2) add 5 eggs and 30 ml of water. (3) Incorporate the liquid, below add (4) 16 g of extra virgin olive oil and knead until the mixture is smooth and compact. The mixture thus obtained is suitable to be machined that to the rolling pin.
What to add: 5 eggs, and 30 ml of water and 16 g of extra virgin olive oil.
Gnocchi

GNOCCHI

PREPARATION

(1) Pour 400 g of Gnocchi powder mix into the bowl. (2) Add 400 ml of water and whisk till the dough becomes firm and pale. (3) Form the gnocchi in the form that you like.
What to add: 400 ml of water.
Wrap / Piadina

WRAP

PREPARATION

(1) Pour the powder mix into the bowl. Add 90 ml of cold water and 26 g of olive oil or lard. (2) Knead dough until it is homogeneous. (3)  Shape into balls and stretch the dought to the desired thickness with a rolling pin on a shelf sprinkled with rice flour. (4) Cook the Wrap/piadine in a hot pan for about 5 minutes until golden in both sides.
What to add: 90 ml of cold water and 26 g of Olive oil or lard.
